Avocado Crunch Salad
Serves: 2–3

Ingredients:
- 2 cups romaine lettuce (chopped)
- 1 ripe avocado (sliced)
- 1/2 cucumber (thinly sliced)
- 8 cherry tomatoes (halved)
- 2 tbsp roasted almonds or walnuts (chopped)
- 1 tbsp sesame seeds (optional)
For the dressing:
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt & pepper to taste
Instructions:
- In a large bowl, mix the lettuce, cucumber, avocado, and cherry tomatoes.
- Sprinkle roasted nuts and sesame seeds on top.
- In a small jar, combine olive oil, lemon juice, mustard, salt, and pepper. Shake well.
- Drizzle the dressing over the salad just before serving.
- Toss gently and serve fresh.
