Avocado Crunch Salad


Serves: 2–3

Ingredients:

  • 2 cups romaine lettuce (chopped)
  • 1 ripe avocado (sliced)
  • 1/2 cucumber (thinly sliced)
  • 8 cherry tomatoes (halved)
  • 2 tbsp roasted almonds or walnuts (chopped)
  • 1 tbsp sesame seeds (optional)

For the dressing:

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt & pepper to taste

Instructions:

  1. In a large bowl, mix the lettuce, cucumber, avocado, and cherry tomatoes.
  2. Sprinkle roasted nuts and sesame seeds on top.
  3. In a small jar, combine olive oil, lemon juice, mustard, salt, and pepper. Shake well.
  4. Drizzle the dressing over the salad just before serving.
  5. Toss gently and serve fresh.
