Cinnamon Streusel Muffins

Ingredients:
For the muffin batter:
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- Pinch of salt
For the streusel topping:
- 2 tbsp brown sugar
- 2 tbsp flour
- 1 tbsp cold butter
- 1/4 tsp cinnamon
Instructions:
Bake for 20–22 minutes until golden and a toothpick comes out clean.
Preheat oven to 180°C (350°F). Line a muffin tin with paper liners.
In a bowl, mix flour, sugar, baking powder, cinnamon, and salt.
In another bowl, whisk milk, egg, oil, and vanilla.
Combine wet and dry ingredients, mix gently until just combined.
Pour batter into muffin liners, about 3/4 full.
In a small bowl, mix streusel ingredients using fingers until crumbly.
Sprinkle the streusel over each muffin.
